The other night, I made what I thought was going to be a killer sauce for some baked chicken. I mixed cream of chicken soup & cream cheese w/ a bunch of yummy spices. My plan was to cover some chicken, bake it, and add a sprinkle of cheese to the top at the end. Mmmmm. I was so excited!
And then, I thought I should add some veg into this dish. Sadly, this was the dish's fatal mistake. The veg I chose came in a type of sauce of its own, a garlicky sauce which I thought would be okay because the garlic would go well w/ the other flavors. Alas, it was not to be. It was gross. : ( I ended up pitching the leftovers. *pout*
So, because of that experience, I wasn't too keen on making more chicken tonight. However, I thought if I just salt & pepper & basil it, w/ a little cheese melted on top, I can't go wrong. I baked a potato and cut up a fresh garden tomato to serve w/ my baked chicken breast tender. And then I thought - I can make a dry rub w/ basil, pepper, cumin, cinnamon, and lemon. Mmmm! So, I took a chance, and I did it (adding in 1/2 a pat of butter so it would stick better and a little oregano), and it was delicious!!
I will definitely use that spice combo again. I'm back, baby!
Also - how great are baked potatoes?? If you get the right one, the skin is sooooo tender & yummy, and packed w/ nutrients!
